sweet potato souffle
3-4 cups sweet potatoes or yams, cooked or smashed
1/2 cup sugar
1/4 cup butter
1/2 cup milk
1/2 tsp salt
2 eggs
1 tsp vanilla
Cream everything together and put in a 9x13 dish.
Topping
1 cup brown sugar
/2 cup butter
1/3 cup flour
1 cup chopped pecans
Mix together and spread over the potatoes.
Bake @ 350 for 30 minutes.
